Sliced Baked Potatoes with Herbs and Cheese.


Ingredíents
  • 4 large bakíng potatoes
  • 1/4 cup melted butter (plan on 1 Tbs per potato)
  • 1 tsp coarse sea salt
  • 2-3 Tbs chopped fresh herbs (or 2-3 tsp dríed):
  • try basíl, thyme, oregano, chíves, or Italian seasoníng
  • 1/4 cup fresh grated Parmesan (other cheeses would be good as well)
Instructíons
  1. Wash and dry potatoes; peel íf desíred. Cut ínto thín slices, but not all the way through the potato (use the handle of a wooden spoon placed alongsíde the potato to prevent cuttíng all the way through). Place potatoes ín a bakíng dísh. Sprínkle wíth butter, salt and herbs, gettíng some between each slice.
  2. Bake at 400°F for 45 mínutes, or untíl potatoes are cooked through. Once or twíce duríng cookíng, spoon melted butter from the bottom of the pan over potatoes. Top wíth cheese and bake an addítíonal 10 mínutes.

Prep Time: 5 minutes
Total Time: 25 minutes
Yield: 12 strawberries
Ingredients
  1. 1 cup high-quality dark chocolate
  2. 1 tablespoon colored sugar or sprinkles
  3. 12 strawberries
Instructions
  1. In a small, microwave-safe bowl, melt the dark chocolate JUST until smooth.
  2. Spoon 1/4 teaspoon of sprinkles into the bottom of decorative silicon ice cube & baking tray (available in the cake baking section of most craft stores)
  3. Spoon 1 tablespoon of chocolate into each cup.
  4. Press a strawberry into each cup.
  5. Allow to cool completely before removing the chocolate cups from the silcone sheet.

Cranberry Corn Muffiins with Sweet Milk Drizzle

Ingredients
  1. ¾ cup cornmeal, preferably medium-grind
  2. 1 cup flour
  3. 2 teaspoons baking powder
  4. ¾ teaspoon salt
  5. 1 cup fresh cranberries
  6. 2 large eggs
  7. 2/3 cup sugar
  8. ½ cup milk (cow, soy, rice, almond, or hemp- anything will do)
  9. ½ cup canola oil
  10. sweetened condensed milk, for drizzling
Instructions
  1. Preheat the oven to 375°F. In a medium bowl, whisk the eggs, oil, sugar, and milk.
  2. In a separate, larger bowl, whisk your flour, cornmeal, baking powder, and salt. Stir in your cranberries.
  3. Pour your wet ingredients into the dry ingredients and stir until just combined.
  4. Lightly coat a standard-size 12-cup muffin tin with nonstick cooking spray. Divide the batter evenly among the cups, filling each about 2/3 full.
  5. Bake for about 22-25 minutes, or until a toothpick inserted into the center of one comes out clean. Serve warm with a drizzle of sweetened condensed milk

Strawberry Margarita Jello Shot Cups


Ingredients
  1. 1 pack Strawberry Jell-O,
  2. ¾ hot water,
  3. 1 pack strawberries,
  4. 1 cup tequila,
  5. 3/4 cup Cointreau,
  6. sugar and lime for garnish
Instructions
  1. Cut both ends of the strawberries, and use a melon baller or small measuring spoon to scoop out the inside.
  2. Mix Jell-O per instruction on box, and add tequilia and cointreau to it.
  3. Pour mixture into strawberries.
  4. Put in fridge for 4 hours to set before serve.
  5. Get out of fridge and garnish the edges of the strawberries with lime juice and sugar, add a piece of lime for decoration on the edge of the strawberries. (optional)
